Recipe of the Quarter: Mbatata Cookies - Malawi

This recipe hails from Classic Africa's Ann Robertson, who received it as a "thank you" for supporting a successful water program in Malawi. Enjoy!

Ingredients

• 1/4 cup mashed sweet potato
• 1/4 cup milk
• 4 tablespoons margarine
• 1  1/4 cups sifted flour
• 2 teaspoons baking powder
• 4 tablespoons sugar
• 1/2 teaspoon salt
• 1/4 teaspoon cinnamon

Method

1. Preheat oven to 375 degrees. Mix sweet potatoes, milk and melted margarine and beat well. Sift and stir in the remaining ingredients.
2. Turn onto a floured board, knead lightly and roll out ½ an inch thick. Cut with a cookie cutter (the Malawians traditionally use a heart shaped one).
3. Place cookies on a greased baking sheet and bake for 15 minutes.
4. Sprinkle cinnamon/sugar mixture on top of warm cookies.
