Recipe of the Quarter- Tangawizi Tea

Tangawizi Chai, Swahili for ginger tea, is a staple drink in Kenya; many families drink it every morning. Recipe adapted from We Eat At Last! by Kate Hahnel, which features other wonderful Kenyan recipes.
Ingredients
2 tablespoons black tea leaves
1 piece (5-10g, one inch) fresh ginger – pounded or sliced
2 cups of milk, plant or dairy
2 cups water
Sugar to taste, optional
Instructions
Add water and sliced ginger pieces to a medium-sized pot. Set it on the stovetop over medium heat. Allow to come to a boil and simmer for 5 minutes or more. Longer simmering results in a stronger ginger flavor.
Add tea leaves and sugar (optional) and simmer for an additional 2-5 minutes, depending on how strong you like your tea.
Add milk and bring to a boil once more, stirring constantly to avoid burning. Keep an eye on the pot to prevent it from spilling over.
Next, reduce the heat to low and let the tea settle. After simmering for at least 2 minutes, bring to a boil for a final time.
Once boiled, switch off the heat, and pass the ginger tea through a sieve to separate the tea leaves into a thermos flask or covered pot.
Pour into cups and serve hot.
NB: Feel free to adjust ratios to your liking – if you like a stronger cup, add more tea. If you want it less milky, feel free to reduce the amount of milk.
