South African Ngala Crunchies
If you have been on safari at Ngala Lodge in South African's iconic Kruger National Park then you will have enjoyed the Ngala Crunchy. These simple buttery bars are staples for breakfast, teatime and game-drive snacks.
Ingredients
5 cups oats
1 cup sugar
1 cup cake flour
2 teaspoons of baking soda
2 teaspoons of syrup (like Lyles – or substitute with honey)
2 cups of coconut
2 ¼ cups of melted butter
Method
1) Combine all the ingredients and mix in the melted butter.
2) Press into a tray and bake at 350 degrees until golden brown.
3) Let cool and cut into small bars.
