Recipe of the Quarter


Beef Mishkaki

(Adapted from a recipe courtesy of Elewana Executive Chef, Nicky Bryden)
  • 2 lbs beef rump cubes
  • 2 tsp cumin seeds
  • 2 tsp coriander seeds
  • 2 tsp paprika
  • 2 tsp cinnamon
  • Pinch of chili flakes
  • 1 tsp ground black pepper
  • 4 T soy sauce
  • 2 T vinegar or lemon juice
  • 2T garlic paste
  • 2 T grated ginger
  • 8 T olive oil
  • 2 T thyme leaves
  • 4 tsp salt
Method:Toast the cumin and coriander seeds in a frying pan until they pop, remove from the heat and crush with a mortar & pestle. Mix everything else together and marinate beef cubes for two hours. Soak wooden skewer sticks in water then skewer meat onto the sticks ready for the barbecue or broiler. Enjoy and think of Summer!
