Recipe of the Quarter: Soetkoekies (spicy wine cookies)

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup packed brown sugar
  • 3/4 cup chopped almonds
  • 1/2 cup cold butter, cut into small pieces
  • 2 eggs
  • 1/4 cup red wine or port
  • 1 egg white, beaten


Method:

  1. Preheat oven to 350°F. Lightly grease cookie sheets or line with parchment paper.
  2. Combine flour, baking soda, cream of tartar, cinnamon, ginger, nutmeg, ground cloves, brown sugar, and almonds and whisk together. Cut in the butter. Stir in the eggs and red wine.
  3. Roll dough into walnut-sized balls and place on cookie sheets about 2" apart. Dab tops with beaten egg white.
  4. Bake 12-15 minutes or until brown around the edges. Transfer to wire racks to cool.

Yield: 3 dozen cookies
