Recipe of the Quarter: Mixed Berry Eton Mess with Amarula

Ingredients
- 9-11 oz mixed summer berries (strawberries, raspberries, blackberries, and blueberries)
- 2 Tbsp granulated sugar
- 3 Tbsp Amarula, plus extra to serve
- 14 oz heavy cream
- 3-4 ready-made meringue shells
Method
- Rinse, hull and roughly chop the strawberries. Place in a bowl with the rest of the berries. Stir in the sugar and leave for about 10 minutes or until the berries soften and start to release their juices.
- Add the Amarula to the cream and whisk until it forms soft peaks. Crumble in the meringues, add the juicy berries and gently fold everything together.
- Spoon the mixture into large glass bowls and serve immediately.
